INDONESIAN SPECIALTIES

Balinese and Indonesian cuisine are definitely a very important part of your vacation experience and must not be missed! If you are allergic to any kind of ingredients such as shellfish, nuts etc or don't like your food spicy, just tell your cook.

For a very wide and truly exciting choice of local specialties, please consult the book "The Food of Bali" which is available in your villa. Browse the photographs and descriptions of about 70 Balinese and Indonesian delicacies and tell your butler or cook what you fancy. Look forward to a very pleasant surprise!

Some of our personal favourites are Green Papaya Seafood Soup and Chicken Soup with Shallots (Cram Cam), Spicy Tuna Salad, Shredded Chicken Pelalah, Minced Seafood Sate with Peanut Sauce (Sate Lilit), Pork in Sweet Soya Sauce (Babi Kecap), Beef Fillet Rendang in Coconut Milk, Vegetable Salad in Peanut Sauce (Gado Gado) and Fried Rice (Nasi Goreng) which all can be easily prepared in your villa.

Two other delicacies not to be missed are Roast Duck in Banana Leaf (Bebek Betutu) and Suckling Pig (Babi Guling), but these are best ordered from outside as the preparation is quite difficult and time consuming. Just tell your staff.

WESTERN CUISINE

As a change from too much Indonesian food or for any kind of special event you can choose from a range of Western dishes – also prepared in your villa and provided at cost prices i.e. at least 50% cheaper than in good restaurants.

Fillet Steak with Herb Butter, incredibly tasty and tender! Fried Prawns or Squid with Butter Sauce, Steamed Herbed Snapper, Grilled Fish with Garlic, Onion or Lemon Sauce, Seared Tuna, Grilled Lobster (Crayfish) with Lemon Butter, Lobster Thermidor, Spaghetti Bolognese, Carbonara or Frutti di Mare, etc.

VARIOUS ASIAN DELICACIES

A few Chinese dishes and specialties from Japan can be prepared by some villa cooks. However, for a good choice of fresh Sushi and/or Sashimi or delicacies from many other countries to be served at your villa, we recommend to order from selected local restaurants and send out your driver to pick up your meal.

Rice Dumplings in Palm Sugar Syrup, Black Rice Pudding, Coconut Pancakes, Fried Bananas, Creme Brullee, Crepe Surprise, Chocolate Brownies, Fresh Fruit or Fruit Salad, etc.


WHAT YOU NEED TO KNOW

All dishes are usually prepared for a minimum of 4 guests, and even for much larger groups we recommend a maximum of 2 different appetizers, 2 different soups, not more than 3 different main courses and 2 different desserts for each meal – to be shared by everybody. If there are only two in your party, please order only one kind of dish per course to share.

Style of Meal Service
Normal meals in your villa are served "Family Style" i.e. instead of carefully arranged on separate plates all dishes will be presented in large bowls or plates in the middle of the table and everybody helps himself. This is the only way to get several different courses at the same time to the table – and still at least WARM.

This service is offered for the maximum number of persons accommodated at the villa plus two visitors from outside, i.e. in case of a 3 bedroom villa you can order meals for up to 8 guests, in a 4-bedroom villa for up tp 10 guets etc. Meals for any larger number of guests are regarded as "Special Events".

For "Special Events" we are happy to provide a wide range of lunch and/or dinner menues, special table settings, extra glasses, plates and cuttlery, additional waiters, beautiful decoration of the venue and entertainment such as Balinese dancers and traditional bands etc. in your villa. Please discuss all requirements with your Butler.

Placing Your Orders
Please discuss your requirements with your butler or your cook at least one day in advance to give your staff enough time to shop for fresh ingredients. Some items are not available every day, and some dishes need longer preparation such as marinating over-night or even longer.

Costs to Expect
For regular meals, your kitchen staff will charge you at market price for the ingredients they need to prepare your orders. As there are minimum quantities for some items, please understand that the cost will increase per serving if you order many different dishes.

The cost for a meal with one appetizer or soup, one main course and one dessert shared by everyone should be only from 50,000 to 100,000 Rupiah per person (more if imported meat, prawns and/or lobster are included). On the other hand, if there are many different dishes for each course to prepare, the cost can increase substantially.

A wide range of imported wines from Australia, New Zealand, Chile, Italy, France etc, beer and soft drinks can be provided at original store prices. Just let your butler know what you require.

For "Special Events", which includes all meals for more guests than the maximum occupancy of your villa PLUS TWO, please discuss all requirements with your Butler and ask for a detailed quotation. Costs are higher than for regular meals as there are more preparations and organisation involved, and there are extra expenses for additional glasses, cuttlery/crockery, sometimes rental of more dining tables and chairs, extra waiters, cooks, etc. to provide the Balivillas.com standard of service.
